Confit tomatoes
Ingredients
500g cherry tomatoes
Sugar 30g
Oregano qb
Parsley qb
Basil qb πΏ
Olive oil π«
Salt qb
1 garlic clove, chopped π§

The confit tomatoes are useful for different preparations.
Caramelized after a long and low cooking.
Good for bruschettas or for timbales (I make the one with tagliolini and anchovies, cheese and confit tomatoes with orange juice, remember that?).
Method
First, I wash the tomatoes, I cut them in two with the open side up.
I bake them on an oiled tin.
I cover them with: salt, olive oil, sugar, parsley, garlic, basil, oregano.
Bake at 150 degrees for 2 hours.
When they are ready, I use the blender and I pour the juice of an orange for my timbale or I lay them on my bruschettas.
