Aubergine cordon bleu

Ingredients

2 round aubergines
Cooked ham your favourite filling
2/3 mozzarellas
2 eggs
Parmesan, grated
Breadcrumbs qb
Flour qb
Salt and pepper qb
Oil for frying

Method

I cut the aubergines into 1cm slices, even number.

I grill them and I fill every couple of aubergine with a slice of mozzarella putting it in the middle and I add cooked ham.

I mash them and pass into the flour, then in the eggs mixed with Parmesan and then in breadcrumbs.

I fry in abundant hot olive oil, after 3 minutes I turn the slices over and over until complete browning.

Then I place the fried slices on absorbent paper and I add salt and a little pepper.

If you like you can put in oven at 180/200 degrees for 15 minutes turning half-cooked.
